Parrish remained California's primary catcher during the 1991 season. At age 35, he appeared in 119 games, collecting 87 hits and 12 doubles while hitting 19 home runs with 51 RBI. His 19 homers ranked third on the Angels behind Dave Winfield and Wally Joyner, giving Parrish another productive power season late in his career.

He also continued to handle a substantial workload behind the plate. Parrish appeared in 111 games at catcher and made 102 starts, working 912 innings. He committed just two errors in 717 total chances for an excellent .997 fielding percentage.
